Nutrition tip of the week: Sweet potatoes!

Ready for an easy on the go snack that packs tons of nutrients and requires little prep time? Try a raw sweet potato! That’s right, RAW! Simply peel, (or don’t peel) and eat. A raw sweet potato has the texture of a carrot, and tastes similar too, but with a little extra sweetness. Traditional cooking tends to cook out some of those nutrients we seek from the food we eat, and that holds true with our beloved sweet potatoes. Be ready for sustained energy and great nutrition! Be sure to wash your sweet potato!

Sweet potatoes do not contain the same amount of resistant starch as white potatoes. Uncooked white potatoes may cause digestive upset. Green or sprouted white potatoes should not be eaten.
